Invert sugar is a mixture of equal parts glucose and fructose produced by acid or enzymatic hydrolysis of sucrose, used as a pharmaceutical excipient, sweetener, and caloric carbohydrate source in parenteral and oral nutritional preparations. It is more hygroscopic and sweeter than sucrose due to the presence of fructose. In pharmaceutical applications, it provides readily metabolizable carbohydrate calories and serves as a vehicle and stabilizer for injectable preparations.
